Cream Wafers

This is an old, family favorite! My mom always made these for Christmas when I was little and I would make myself sick eating them. My daughters and I make them every year and we still make ourselves sick eating them. I know, I know! That probably isn't a very appealing way to describes these little bits of heaven, but once you try them, you'll know exactly what I'm talking about!

Preheat oven to 375°F. Combine first four ingredients and chill for about 20 minutes.

Roll dough 1/8" thick. Cut into 1" to 1.5" rounds (although we often use star or petal shaped cutters). Transfer to wax paper and sprinkle with sugar. Turn to coat both sides.

Place on un-greased baking sheet. Prick in 4 places with a fork. Bake 7 - 9 minutes or until slightly puffy. Cool.

While cookies are cooling, make the filling by blending the next four ingredients. Tint with food coloring.

Spread the filling on cooled cookie and put together like a little sandwich.
