Meatballs in Fried Tomato Sauce
Perfect to prepare ahead and serve 'tapas' style
Steps

Make the meatballs with the minced beef adding the egg and parsley. Roll them in breadcrumbs and brown them in a bit of hot oil. Keep until needed.

Scald and peel the tomatoes

Sautee onion until soft with garlic and a bit of chilli pepper in a bit of olive oil.

Add the tomatoes and cook for 15-20 minutes. Add parsley and seasoning

Once cooked mash to make the sauce smoother. It can be blended if preferred

Add the meatballs and cook together for 2 - 3 minutes

Serve with some nice bread
