They always make a great addition to any meal.

First, roast, steam, peel, wash, and clean one or two poblano peppers, then slice them into strips.

In a skillet, heat a little olive oil and sauté half an onion, sliced into half-moons. Add the poblano strips and two chopped shrimp for each taco you plan to make. Season with salt and pepper.

Separately, grate Manchego or Gouda cheese. When the shrimp are ready, warm the tortillas and add a spoonful of the shrimp and poblano mixture with grated cheese to each one. Place them on a griddle or skillet until the cheese melts.

Serve with red salsa and slices of avocado or with guacamole.
