I was served this dish in Mexico City years ago. While I was a bit confused by some of the ingredients, it was fantastic! Since then I've tried to recreate it. Well, I finally nailed it. This salad goes great on so many dishes. Especially any Mexican dish you can think of. I love it with sturdy salty tortilla chips. Excelente trabajo estudiantes!

This recipe makes 10 - 6" oversized/overstuffed Taquitos or, 20 - 4" regular Taquitos.Don't use corn tortillas as they will split and crack terribly upon construction.Shredded pork is another great option! I also use low carb/lower calorie flour tortillas. You literally cannot tell the difference!By the way, these are so easy to make, know that 8 year olds made them!

Just pile your chicken sauce on the top of it and eat it by hand.Use low sodium broth if you prefer your dishes a little less salty. Know that as this sauce reduces, the salt flavor will indeed enhance itself. But, we do adore that slightly salty touch!Serve with Green Tabasco.
