  1. 2Eggplant
  2. 4Zucchini
  3. 1Green pepper
  4. 1Onion (large)
  5. 2 cloveGarlic
  6. 1 dashParsley
  7. 1 dashThyme
  8. 2Bay leaf
  9. 1 dashSalt
  10. 1 dashPepper
  11. 3 tbspOlive oil
  12. 2 canDiced tomatoes (8 oz. can)
  13. 1 pinchCinnamon
  14. 1 lbGround Turkey

  1. 1

    Chop up onion and garlic cloves

  2. 2

    Sauté chopped onions and garlic cloves in olive oil in a pot

  3. 3

    Add meat to the sauté onions until meat is broken up (does not need to be fully cooked)

  4. 4

    Cut up vegetables and add them to the sauté

  5. 5

    Add the rest of the ingredients to the pot and cook with lid on for 1.5 - 2 hours on medium heat

I have a lot of fresh ingredients from our garden. I have fresh tomatoes, green pepper, zucchini, and eggplant. Can I use the fresh tomatoes in my recipe instead of the canned? Also what do you serve ratatouille with?
