Ingredients

  1. 1 cupmargarine (partially melted & cooled)
  2. 3 cupgranulated sugar
  3. 6 largeeggs
  4. 3 1/3 cuppumpkin pie mix
  5. 1 cupcool water
  6. 6 cupall purpose flour
  7. 3 tspbaking powder
  8. 2 tspbaking soda
  9. 1 tspsalt
  10. 1 1/2 tspground cinnamon
  11. 1 tspground nutmeg
  12. 1 pinchground nutmeg

Steps

    Preheat oven to 350°F

    Prepare jumbo muffin cup with non-stick spray.

    In a large bowl beat together butter and sugar until crumbly.

    Beat in eggs one at a time.

    Wisk in pumpkin and water. Set aside.

    In another large bowl wisk all dry ingredients together.

    Then sift dry ingredients twice.

    Wisk wet ingredients into dry until just incorporated.

    Make sure there are minimal lumps but don't overmix.

    Fill muffin cups to just under 3/4 full.

    Bake about 25 minutes or until toothpick comes out clean.

    Let stand 5 minutes then transfer to wire rack for cooling.

    Serve as is or top with a cream cheese drizzle.

im 41 and a mom of 3 kids and 2 step kids.and one fiance jason.i love to cook and bake anything! i love trying new foods and new recipes.. and when i try something new with kids i always have a back up plan. i always try to come up with something new and interesting. im always changing my style cuz i love different.
