Ingredients

  • Pressure Cooker
  • 1 cuppinto beans
  • 2 clovegarlic
  • 1bay leaf
  • 3 cupwater
  • Fry
  • 1/4 cupvegetable oil
  • 1onion, chopped
  • 2 clovegarlic
  • 1jalapeno
  • 1/2 tspsalt
  • 1 tbspchili powder
  • 1 tbspground cumin
  • 1 pinchcayenne pepper
  • 1 tspsalt
  • 1 tsppork seasoning

  1. 1

    Rinse pinto beans and remove foreign materials, shriveled beans, etc.

  2. 2

    Add all pressure cooker items to pressure cooker and give a quick stir.

  3. 3

    Bring pressure cooker to high pressure and hold for 30 minutes.

  4. 4

    Remove bay leaf and garlic and blend to your desired consistency (chunky or smooth).

  5. 5

    In a frying pan, add oil and saute the onions, garlic and jalapeños until soft (about 5 minutes).

  6. 6

    Add spices and saute another minute or two to combine with veggies.

  7. 7

    Add beans and fry together another five minutes or so.

  8. 8

    Adjust salt and spices as necessary.

  9. 9

    Serve with a dallop of sour cream or your choice of cheese on top.
