In a medium pot, melt the ghee or butter and sauté the finely chopped onion until it softens.

Add the rinsed lentils and sauté for a few minutes.

Pour in the water and add the listed spices. Cover and simmer on low heat for about 1 hour, or less depending on the type of lentils.

Once the lentils are cooked, if the soup has a smooth consistency, serve as is. If you notice excess water, blend the soup with an immersion blender or in a regular blender until smooth.

Personally, I like to keep the lentils whole for their texture, but if you prefer a smoother soup, blend until fully combined.

When serving, top with fried bread pieces. Enjoy—this soup is delicious and I highly recommend trying it!
