This is one of the best methods I found to make nice fluffy rice. The resting parts really do help because the rice absorbs the remainder of the moisture in the pot.

Ingredients

40 mins
4 servings
  1. 1 cuplong-grain white rice
  2. 1 knobunsalted butter or a tbsp of olive oil
  3. sea salt
  4. 1 3/4 cupwater

Cooking Instructions

40 mins
  1. 1

Rinse the rice in a few changes of water. Then drain well using a sieve. (Rinsing the rice in a number of different waters will remove loose starch, making the rice less sticky.)

  2. 2

In a medium pot with a tight fitting lid, combine the water, the rice, salt and butter. (Tight fitting lid will keep all the steam in, if the lid is loose, put a clean kitchen towel between the pot and lid.)

  3. 3

Bring to the boil over high heat.

  4. 4

As soon as the water is boiling lower the heat to simmer. Cover with the lid also.

  5. 5

Cook at a gentle simmer until the water is all absorbed and rice has become tender. Normally takes about 12-14 minutes. (Tip: If lifting lid to check rice, replace it as quickly as possible)

  6. 6

When step 5 is done remove the pot from the heat and let it sit, undisturbed with the lid on, for a minimum of 5 minutes and a maximum of 30 minutes.

  7. 7

Remove the lid, and fluff the rice gently with a fork.

  8. 8

    Serve immediately.
