Ingredients

  1. 2 sliceancient grain bread, toasted
  2. 50 gramsfeta cheese
  3. 1 mediumvine tomato
  4. 1sliced cucumber
  5. 1handful of spinach/arugala blend
  6. 2 tbspbalsamic vinegar
  7. salt & pepper
  8. 1/2 tspreal mayonnaise

  1. 1

    Toast bread. Slice tomatoes & cucumber. Slice a thin piece of feta cheese.

  2. 2

    Pour vinegar on a plate, lay feta on top, flip to coat both sides. Place on 1st piece of bread.

  3. 3

    Layer tomatoes, salt & pepper, cucumber, spinach & arugala, mayonnaise, & 2nd piece of bread.
