Mexican Coffee Buns aka Rotiboy

I only just heard the this Mexican Coffee Bun is not actually Mexican but Asian. I'm not really sure about this, but the website I saw stated that. Cookie dough on bread is actually quite normal here where I'm from (Polo buns are an example). My brother used to love these Rotiboy, as we call them, and we would have it at least three times a week for breakfast. Try it, you won't regret it.

Ps The amount of coffee in the cookie batter can be adjusted to preference.

Ingredients

  1. bread softener
  2. 300 gramsstrong bread flour
  3. 300 mlcold water
  4. 1 gramsactive dry yeast
  5. Bread
  6. 330 gramsstrong bread flour
  7. 90 mlmilk
  8. 200 gramsbread softener (as above)
  9. 1egg
  10. 70 gramssugar
  11. 20 gramsmilk powder
  12. 5 gramsactive dry yeast
  13. 1 tspsalt
  14. filling
  15. cubes of butter
  16. topping
  17. 50 gramsbutter, softened
  18. 50 gramssugar
  19. 1egg
  20. 2 tbspstrong coffee
  21. 70 gramsall-purpose flour

    Make the bread. I used a bread machine, and it looks to me that if you throw in all the ingredients and beat the dough for twenty minutes or so, let it rest for ten minutes, then beat again for another ten minutes then leave it to rise for ten minutes. This is rather sketchy, so I recommend those who do not have a bread machine to Google on how to make bread and follow that if you're doubtful.

    Separate bread dough into round lumps of roughly 60g (or your own prefered size and shape).

    Let rest for half an hour or until the dough has doubled in size.

    Meanwhile, beat buter and sugar in a bowl until pale and fluffy.

    Beat in egg and stir in the coffee.

  6. 6

    Sift the flour into the mixture and stir gently until corporated. Do not over work it.

    Pour the cookie batter into a piping bag with the tip snipped off.

  8. 8

    Pipe the cookie batter in circles on the bread dough before baking it in preheated oven at 180℃.
