Cooking Instructions

boil pasta as directed on the package
- 2
shred cheese
- 3
in a large stock pot saute bacon until almost crispy.

place cooked pasta and bacon in large oven safe dish. (spray dish with nonstick spray or you will hate life when it's time to do the dishes! )

using the bacon grease make a roux. over med heat add the flour 1/3 cup at a time stirring constantly. once all the flour is added keep stirring and cook 3-4 min

whisk in the milk slowly

once all the milk is added increase the temp to med high. whisking constantly, slowly add all the cheese 1 handful at a time. allow it to melt before adding another handful

once all cheese is melted, pour the cheese sauce over the pasta

crush club crackers and spread evenly over pasta

bake at 350 for 30 min

When trying to come up with a bonito flake recipe for a competition, my daughter gave me two words: "bonito crackers." After some testing, this cracker came about. Special thanks to my daughter.At Step 3, the dough should be just about coming together when patted with a spatula. Depending on the type of potato, it may be too floury and won't come together. In that case, add 1 teaspoon of milk at a time. If the dough is too loose with moisture, let rest for about 30 minutes in the fridge, or add 1 tablespoon of cake flour at a time and put together. When cutting the dough, if you cut the edge thinly and bake them together, they will turn into pretzels. (Take them out after 15 minutes into baking at 190℃, though, since they will bake faster.) This dish is basically mac and cheese, except for the fact I didn't notice ahead of time that we'd run out of macaroni noodles. Fortunately, a box of penne rigate made a more than reasonable substitute. For the cheese blend, pecorino romano provided a nice earthiness, smoked gouda brought, well, a hint of smokiness, and cheddar gave the tang and texture you expect from a mac and cheese sauce. All were whisked into a bechamel base, which provided additional creaminess and prevented the oily runoff you sometimes get when melting cheese. Needless to say, the final dish was a huge hit with my wife and daughter, both of whom are cheese aficionados. As for me, I'm not as big a fan of mac and cheese, but I still enjoyed it just fine, especially sprinkled with a little smoky paprika. Robert Gonzal
