Ingredients

  • 2 packagestortilla chips
  • 1/2 lbchorizo
  • 1 mediumwhite onion, chopped
  • 1jalapeno, chopped
  • 3 clovegarlic
  • 1poblano pepper, peeled, seeded, chopped
  • 1 lbground sirloin
  • 1 1/2 tbspcumin
  • 2 tsponion powder
  • 1 tspchili powder
  • 1/2 tspsalt
  • 1/2 tspblack pepper
  • 1 canblack beans, drained
  • 1 cupfrozen sweet corn
  • pico de gallo
  • 3tomatoes, seeded, diced
  • 1 smallwhite onion, chopped
  • 1 cupcilantro, chopped
  • 1/4 tspsalt
  • 1 tsplime juice
  • cheese sauce
  • 2 tbspunsalted butter
  • 2 tbspflour
  • 1 cupmilk
  • 2 1/2 cuppepper jack cheese, shredded
  • garnish
  • 1/4 cupsweet jalapenos, drained
  • 3 stickscallions, chopped
  • 1/2black olives, sliced
  • 1avocado, diced
  • 1jalapeno, slices
  • 1/4 cupsour cream

  1. 1

    Mix all the pico de gallo ingredients together in a bowl and allow time to marry the flavors.

  2. 2

    Pour chips on a platter and spread out evenly.

  3. 3

    Cook and crumble chorizo then remove from pan. Leave grease in pan.

  4. 4

    In same pan, sautee onions, peppers and garlic. Once onions are translucent add sirloin. Next add seasonings and mix well. Cook until meat is brown. Next add beans and cook a little longer. Next add chorizo and corn and cook a couple more minutes.

    In a sauce pan, melt butter without browning it. Add flour and cook. Add milk and bring to boil. Lower heat and add cheese. Stir until cheese is melted and the sauce has thickened.

    Pour sauce over chips. Add meat. Add pico de gallo. Add garnish.

  7. 7

    Serve.
