  1. 228 ounnce cans of italian plum tomatoes, pulsed in food proccesr a few seconds
  2. 115 ounce can petite chopped tomatoes
  3. 4 cloveminced garlic
  4. 1 mediumonion, chopped
  5. 1/2 tspitalian seasoning blend
  6. 1/2 tspblack pepper and salt to taste
  7. 1/4 tsphot sauce, such as franks brand
  8. 1 tbspheavy cream
  9. 1/4 cupfresh grated parmesan cheese
  10. 2 tbspfresh chopped italian parsley
  11. 20thin slices pepperoni
  12. 1 tspgood olive oil

    In a large saucepan, add pepperoni and cook over low heat until fat is rendered and they are crispy, Watch as they burn easily.Remove from pot and drain on paper towels

    Into fat rendered from pepperoni add olive oil, then onion and garlic, soften for about 1 to 2 minutes.Add all remaining ingrediemt, except parsley ad simmer until thickened, about 60 to 90 minutes, uncovered, add parsley the last 5 minutes of cooking stir often.

    This sauce is a great basic sauce, great just on pasta or with meatballs and sausage, or in any recipe asking for a marina sauce.Add sauteed meat to make it a meat sauce. Or sauteed even sauteed mushrooms or peppers.

    The pepperoni is yours to eat, it is great crumbled on a green salad!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
