Adulterated version of my mom's enchilada recipe. She didn't know how to cook, so I made them way better. Originally just ground beef and picante sauce. Seriously it was terrible.

Ingredients

  1. 6Whole Wheat Tortillas, 8"
  2. 2 cupShredded Cheese
  3. 1 lbGround Turkey
  4. 1 packagesLow Sodium Taco Seasoning
  5. 1 canRed or Green Enchilada Sauce, 28 oz

Cooking Instructions

  1. 1

    Preheat oven to 350°F. Brown turkey in a pan, add taco seasoning via directions on the package

  2. 2

    Wrap the seasoned turkey and some cheese enchilada style in the tortillas, leaving enough cheese for topping later.

  3. 3

    Coat the bottom of a casserole dish with a thin layer of enchilada sauce. Arrange enchiladas inside, and cover with remaining sauce.

    Bake at 350°F for 25 minutes

  5. 5

    Let stand for 10 mins before eating. Top with sour cream for extra flavor.
