  1. Dry ingredients
  2. 1 1/2 cupflour
  3. 1 tspbaking soda
  4. 1/2 tspsalt
  5. Wet ingredients
  6. 1 cupbuttermilk
  7. 2 largeegg yoke
  8. 2 tbspsugar
  9. 2 tbsplemon zest (or to taste)
  10. 1/2 cupricotta cheese
  11. 2 largeegg whites

    Mix dry ingredients together, set aside

  2. 2

    Mix wet ingredients, add to dry ingredients, mix well

  3. 3

    Beat egg whites until they form soft peaks, then fold in to mixture

  4. 4

    Heat pan use 1/4 cup of batter, cook until golden brown flip
