Once I prepared mawa cakes and just loved the taste. I always store malai in my freezer and thought why don't I use this to prepare cakes... inspite of using mawa I can use malai... then I tried these cup cakes by making some changes in it and it's a hit... my mom, who is not a cake-loving person.... she loved these cakes.... that made me so happy because my mom and my husband are my biggest critics... if they like anything then they takes me to the top and at same time if any thing goes wrong then .... oh god... they both loved it so... in sha allah... you all will love these cakes.... try it and let me know your experiences ...

Ingredients

  • 100 gmsButter
  • 3/4th cup (180gms) All purpose flour
  • 1cup(220gms) Castor sugar
  • 3/4 tspBaking powder
  • 120 gmsMalai
  • 3Eggs
  • 2 tbspMilk
  • 1/2 tspCardamom(coarsely grinded)
  • 1 pinchSalt
  • Cashew nuts

Steps

  1. 1

    Brush the muffin tray with cooking oil and keep aside.

  2. 2

    Preheat the oven at 180 degrees for 10 minutes.

  3. 3

    Mix all the dry ingredients, flour, salt, baking powder and cardamom and keep aside.

  4. 4

    Now, using electric blender, beat malai, butter, and sugar altogether at minimum speed.

  5. 5

    Once its combined, add in the eggs one at a time and beat well.

  6. 6

    Now, add all the dry ingredients and milk and beat until everything is combined.

  7. 7

    Divide the prepared batter evenly amongst the muffin tins to 3/4th of the height.

  8. 8

    Top each one with broken cashews and bake for 25- 30 minutes at 180 degrees.

  9. 9

    Cool it on a wire rack for 5 minutes and unmold the muffins from the muffin tray. Yummy yummy malai sponge cupcakes are ready.
