I love homemade jerky but could never get it just right, until now. I think I got it, let me know what you think.
Cooking Instructions

Combine all ingredients in a large pitcher or bag (blend first if you want).

Add in brisket and marinate in the fridge for no more than 24hrs. I put mine in a food saver bag and sealed.

Cover 1 oven rack with foil place all the way on the bottom of oven. Skew all meat and hang through other oven rack and place on the top. Preparing over a clean sink makes it pretty easy.

Place oven on lowest temperature. Mine was 170°F. Remember you're drying not cooking. Crack the oven door and dry for 4 to 6 hours. Dry to 6hrs if you plan on storing the jerky for a long time. Shorter drying time leaves jerky juicy but won't keep. Enjoy and explore new flavors!

Native Americans didn't have refrigeration unless it was winter time. This was overcome by preserving meat in this fashion. This is one method to making pemmican. Another method is the same, except grinding the meat into dust add dried fruits and/or wild onion and then pouring tallow over the top. Then using an axe to chop off what you wanted to eat. It was eaten straight up or boiled in its own tallow. This is the simpler method. When they used berries it really became the perfect superfood. The berries were are high in vitamins c and other nutrients. This would prevent scurvy. If kept dry and sealed in tallow, it could last 50 years they estimate. I've been making jerky the traditional way, from thinly sliced lean beef, for over 30 years. Last year (2014) I became curious about making it from ground meat with a jerky gun, so I decided to give it a try. Was a bit nervous that my family, who've always LOVED my jerky, wouldn't like this new way as well. Turned out quite the opposite!
