Cut the top and bottom of pineapple, then cut down the sides to take the outside coating off

Using a sharp knife slice into rings

Then cut out the core in the middle

In an oven proof dish layout the pineapple rings

In a bowl, add the sugar, lastly add the rum and mix all together

Cover the pinapple all over with the mix. Cover with foil

Cook on 200°C or gas 8 for 30 minutes. Then take out turn all the pineapple over and make sure they are coated. Then back in the oven for a further 30-45 mins. Take the foil off for the last 15 minutes.

Drain off the sauce and put it in a jug, when its cooled it will be a little thicker to pour a little over your ice cream. Gorgeous served with vanilla ice cream, and rum juice poured over .
