Preheat oven to 450°

Combine cornmeal, panko bread crumbs, 1/2 tsp salt, pepper in a bowl

Combine buttermilk and egg in a large bowl and whisk together

Add okra to buttermilk mixture, mix, let stand 3 minutes

Dredge okra in cornmeal/crumb mixture

Place okra in a pan coated with cooking spray

Sprinkle remaining salt over okra
- 8
Bake for 30-35 minutes stirring once until golden brown and crispy
