2 largePotatoes
1Spring onion sliced
4 tbspLight sour Cream
20 gramsGrated cheddar cheese
1 tspOlive oil
1 pinchSalt and pepper

1 hour 10 mins

Preheat oven to 200°C. Fork each potato six times on all sides.

Place on a square of foil and pour on olive oil and a pinch of salt and pepper.

Wrap each potato in the foil and cook for 1 hour or until soft and completely cooked.

Unwrap from foil and top with sour cream, cheese and spring onions.
