I love this recipe because it brings back beautiful childhood memories of my mom making cookies. My version might not be exactly the same, but the flavor is just as delicious. There’s nothing like mom’s cookies.

I love this recipe because it brings back beautiful childhood memories of my mom making cookies. My version might not be exactly the same, but the flavor is just as delicious. There’s nothing like mom’s cookies.

Beat the eggs with the oil, sugar, vanilla extract, and the juice and zest of the citrus fruit. Mix well until fully combined.

In another bowl, mix the cornstarch and flour. Gradually add them to the wet mixture and fold in with a spatula. (If you’re adding chocolate chips, do it now.) If the dough is sticky, add more flour. Preheat the oven to a high temperature (almost maximum, depending on your oven).

Roll out the dough to a medium thickness. Cut out cookies with your favorite cookie cutter, or use a glass if you don’t have one. Grease a baking sheet and place the cookies on it. Bake for about 10 to 15 minutes, checking to make sure they don’t overbake. Let them cool and enjoy with hot chocolate, mate, or your favorite drink.
