Ingredients

  • 1 canblack beans
  • 1 bunchgreen onions; sliced
  • 1yellow or red onion; small dice
  • 1 clovegarlic; minced
  • 2 tbspsmoked paprika
  • 1 tspcayenne pepper
  • 1 tspcumin
  • 1/2 tspcinnamon
  • 1 1/2 tbspOlive or veggie oil
  • 1salt and pepper

Steps

  1. 1

    Drain and rinse beans.

  2. 2

    Sweat onion in saute pan. Add garlic.

  3. 3

    Add beans. Season and toss. Saute 1 minute

  4. 4

    Add green onions. Toss. Serve

  5. 5

    Variations: Bacon fat, corn, jalapeno, cilantro, lime juice/zest, chipotle salsa, tomato puree, bell peppers, squash, eggplant
