
Rolled Oatmeal Raisin Cookies

Preheat Oven to 375°F

Bake oats in oven for twenty minutes until toasted

Place 8 oz. of toasted oats into food processor and run for a fine grain

Combine butter, brown sugar & sugar into standing mixer for 3.5 minutes on medium speed using paddle

Add egg and vanilla extract to mixer

Add cinnamon and baking powder to food processor with ground oats

Add ground oat mixture to standing mixer and combine SLOWLY

Using Stir, add raisins and the remaining whole oats until batter is smooth

Use ice cream scoop to portion out 24 cookies and place them on parchment paper baking pans

Bake at 375 for 12-14 minutes or until edges are browned; Rotate pans halfway through cooking
