
Marcelina's Spanish Rice ! :-)

Steps

Finely chop onion, green pepper, and jalapeno.

Over medium heat add oil to pan, then onion, pepper, and chili. Saute until onions are translucent.

Add rice and stir, coating with oil. Do not burn rice, your not looking to brown really.

I add the cumin, and bullion cube next. Stir again coating rice.

Add can of tomatoes, and water. If using minute rice use a bit less water. Cover and reduce heat slightly.

Cook until water is mostly evaporated, about 20-25 min. Time for minute rice will be less than long grain.

If you can find canned tomato, green chili, and cilantro that adds a great flavor! Enjoy!!
