Ingredients

1 canCream of Chicken soup
1 canCream of mushroom soup
1 canEnchilada sauce
1 canEvaporated milk
1 packagesMedium size flour tortillas
2 cupShredded co-jack or mexican blend cheese
1 lbCooked ground beef or cooked shredded chicken

Preheat oven to 350°F

In large skillet, combine cooked meat and all canned ingredients. Bring to a simmer.

In a 9 x 11 baking pan, coat w/ cooking spray

Layer 2 tortillas to cover bottom of pan. Spread 1/3 meat sauce on top, sprinkle 1/3 of cheese. Repeat. End with tortillas on top.

Cover with foil. Bake @ 350 for 45 min.

Let stand 10 min before cutting to serve

Can garnish w/ salsa, lettuce, etc. freezes and reheats beautifully!
