preheat oven to 350° F

pierce potatoes & place on baking pan.

bake 1 hour & 15 min, until very soft.

peal & mash potatoes

add cream cheese, butter, sour creaam & 1 cup cheddar cheese

stir well

spray 13 x 9 pan. add potato mixture

cover with plastic wrap & refrigerate until ready to bake

bake casserole 30 to 35 min until hot

sprinkle with remaining cheese

return to oven for 5 min until cheese melted

garnish w/ chives & bacon
