preheat griddle to medium or medium-high heat. add non-stick spray if needed.

mix all the ingredients together until well mixed

pour by 1/3 cup (you can adjust the amount forthe size you want) and allow to cook until bubbles appear and have popped, leaving slight indentations in the raw side of the cake

flip with a spatula and allow the other side to cook until golden.

please note that when you firts put the batter on the griddle, you can add little treats...chocolate chips, crushed nuts, blueberries, etc. Be sure you add them before they cook too much ot else theywill not cook into the pancake and will stick to the griddle.
