Steps

Wash rice in cold water and leave to soak in clean cold water for 20 mins. Then drain in fine sieve.

Heat oil on a medium heat in a large pan.

When oil is hot add chopped onion and cook until just turning brown.

When brown add garlic, chilies, cinnamon, corriander, cloves and rice. Cook for about 3 mins and keep stirring to coat rice in oil.

Now add chicken stock and cover pan gently bring to boil.

When boiling turn off heat, leave pan covered and let rest for about 20 mins. IMPORTANT, it is tempting to have a look but don't, the heat is off it won't burn. The rice is cooking in its steam and this gives more taste. Keep the heat in.

After about 15 mins you can have a look and give it a stir to fluff up the rice. If you think it needs more water add 1/4 pint boiling water and cover pan for about 5 mins (no heat) then check again.
