Ingredients

  1. 2 cupuncooked multi grain elbow macaroni
  2. 3/4 cup(3 ounce) parmesan cheese
  3. 3/4 cup(3 ounce) shredded cheddar cheese
  4. 1/2 cupskim milk
  5. 2egg whites lightly beaten
  6. 1/4 cupreduced fat sour cream
  7. 1 tbspDijon mustard
  8. 1/4 tspsalt
  9. 1/4 tsppepper
  10. 1(16 oz) bag frozen petite peas, thawed
  11. 1 cupfinely chopped cauliflower
  12. 1/4 cupsoft whole wheat bread crumbs

Steps

  1. 1

    preheat oven to 350°F

  2. 2

    Prepare macaroni in a large dutch oven according to package directions. drain well, return to dutch oven, cover and keep warm.

  3. 3

    combine cheeses and next 8 ingredients in a bowl. stir mixture into warm macaroni; spoon into 1 1/2 quart casserole coated with cooking spray. sprinkle crumbs on top. bake 30-35 minutes or until golden and bubbly.
