wash the pork butt and let dry in the ice box over night or pat with towle

if you are going to cook the pork butt that day preheat oven to 400

cut the onion, celery, carrots into large cubes and spread out in a pan the is a little larger then the pork butt
- 4
tip: line the pan with foil

mix all the seasoning in a bowl. with a knife poke slits into the pork (all over) then rub the seasoning all over the pork and into the slits.

place the pork into the pan on top of the veggies and cover with foil

put into the oven for 2 hours then remove the foil but place it on the top rack so the skin does not burn

then cook for another hour at same temp.

after the hour lower the temp to 325 for another 1 1/2 to 2 hours

to test doneness use a kitchen thermomitor and insert to the middle of the pork, the temp should read 165
