heat over to 200c

melt the butter and alow to cool, use 1 tbs of the butter to coat the moulds (muffin tin can be used)

sift the icing sugar and flour into a bowl mix in the almond meal
- 4
Lightly beat the egg whites in a seperate bowl until frothy then fold them into dry ingredients

add melted butter and stir until combined
- 6
at this point you add a little flavouring eg 1tbl grated lemon or orange zest or pureed strawberries or blueberries and mix well

fill each mould until 3/4 full and place in the middle of the ovem

bake for 10 mins' then turn the tray around and bake for another 5 to 10 mins until the tops are golden and spring back when touched

remove from oven and leave in moulds for another 5 mins

turn onto wire rack allow to cool and sprinkle with icing sugar
