Wash chicken. Apply lemon juice, salt and red chillie powder. Mix well. Add garlic and ginger paste. Mix well. Add garam Masala. Mix and keep the marinated chicken in refrigerator for half an hour to one hour.

Slice onions. Deep fry the sliced onions until red. Keep it aside.

Wash rice. Rice has to be par boiled. In a pan add one and a half cup of water. Add salt, cloves, cinnamon stick, cardamom, little ghee and allow to boil. Once done almost 40% , drain off the water and keep the rice aside.

In a thick bottom pan, put 2 tbspoon ghee. Add the marinated chicken. Add a layer of pqrboiled rice. On to it sprinkle little biryani Masala, almond crushed, washed coriander and mint leaves. Repeat the layer rice, biryani masala,almomd, coriander and mint leaves.

We need to seal the cover using wheat flour dough. Apply rolls of wheat dough on the rim of the pan. Now cover it with the lid.

Cut through the dough with a knife and serve hot ... DUM BIRYANI
