Preheat your oven at 350 f / 180 c oven

Mix flour salt and baking powder. Create a well in middle and set aside.

In another bowl add the canola oil and sugar and whisk them well untill they are combine and a bit pale in colour.

Add your eggs throughly add vanilla extract and a spoonul of vinegar.

Add the mixture to the flour and whisk to incorporate the flour

If the dough becomes a bit tough. Put the whisker aside and use your bare hands to mix. Knead till the dough is well combined and still soft.

Freeze the dough for about 30 minutes.

Line your baking tray with a patchment paper. Do not grease your paper.

Take out the pastry. To make the cookies, scoop the pastry with a table spoon roll in into a ball shape using your palms. Place the ball in the patchment paper. You can flatten it with a folk for beautiful shapes.

Repeat the procedure till all pastry is rolled out. Make sure there is a one inch gap between the cookies because they tend to expand during baking.

Bake the cookies for 8 to 10 minutes. Check if ready. If they are still soft on top you might add some few minutes.

If you love the cookies hard. Put off the oven and leave them inside.
