  2. 1 1/3 lbspork ribs, chopped
  3. 1rabbit, chopped
  4. 1.1 lbschicken, chopped
  5. 5.3 ozflat green beans
  6. 4artichokes, chopped
  7. 5.3 ozbacon
  8. 1/2red bell pepper
  9. Olive oil
  10. Salt
  11. 8 quartswater
  12. Saffron
  13. A fewsprigs of rosemary
  14. 1.1 lbscrushed tomatoes
  15. 2 clovesgarlic
  16. 1.1 lbsfield snails (optional)

    Season the meat and fry until golden brown.

    Move the meat to the edges of the paella pan and sauté the vegetables (red bell pepper, green beans, artichokes, and bacon) in the center.

    Add a pinch of salt.

    Once the vegetables are sautéed, mix them with the meat.

    Add the snails.

    Add the crushed tomatoes and minced garlic. Cook for 10 minutes on low heat to enhance the flavor.

    Add 7 quarts of water and bring to a boil.

    Let it reduce and add the remaining quart of water.
