4skin-on chicken breasts
150 gramsfirm goat's cheese
1 bunchof thyme
500 gramscherry tomatoes, halved
1drizzle of olive oil
1splash of white wine

Turn oven to fan 170C/conventiona l 190C/gas 5. Loosen the skin from he chicken breasts and slide a slice of goat's cheese and
a sprig of thyme under the skin of each. Put in a shallow
ovenproof dish.

Scatter the tomatoes around the chicken with a few more sprigs of thyme, a drizzle of olive oil and a splash of white wine. Season.

Bake for 25-30 minutes, until golden. Serve with rice, if you like
