Ingredients

2/3 cupsugar
2 cupsflour
4 tspbaking powder
1 tspsalt
1/2 cupchopped pecans
2/3 cupfinely cut dried apricots
1egg, beaten
1 cupmilk
2 tbspmelted shortening

Cooking Instructions

Mix together sugar, flour, baking powder, & salt.

Add pecans & apricots. Stir.

Add eggs, milk, & shortening. Mix just until combined.

Pour into greased 9x5 inch loaf pan.

Let stand 20 minutes.

Bake in 350 degree oven for 1 hour.

Yum! I used 1/2 brown sugar & 1/2 white sugar; and I used walnuts because that's all I had on hand. Easy to make. If you like apricots, this is the cake/bread for you.
