Bacon, Tomato & Barley Soup

Ingredients

  1. 3 tbspolive oil
  2. 150 gramsstreaky bacon, finley chopped
  3. 1 largered onion,peeled and finely chopped
  4. 2stalks celery, finely sliced
  5. 2carrots,chopped
  6. 2 clovegarlic,finely chopped
  7. 2 cantomatoes
  8. 3 cupchicken stock
  9. 1/2 cuppearl barley
  10. 1/4cabbage, shredded
  11. 1/4 cupparsley,finely chopped
  12. 1shaved parmesan to garnish ( optional)
  13. 1salt and pepper to taste

Cooking Instructions

    Heat the oil in a large saucepan and gently cook bacon, onion, celery, carrots and garlic until tender.

    Add the tomatoes and chicken stock to the pan and bring to the boil.

  3. 3

    Add pearl barley, turn heat down and simmer for 30-40 minutes until tender.

    Season the soup to taste. Add the cabbage and parsley and cook for a further 15 minutes. Serve as is or garnish with the shaved parmesan.
