Ingredients

  • 1Crispy fried onion using 3 small onions 90gm@
  • 2 smallOnions, chopped
  • 2Inch fresh ginger, peeled and chopped
  • 4 cloveGarlic, peeled and chopped
  • 4 tbspOil saved from frying onions
  • 1 tbspGhee our extra oil
  • 1 3/4 kgChicken, skinned and in small pieces (our drums)
  • 6 tbspNatural yoghurt
  • 610 whole birds eye chillis with small slits cut in them
  • 1 1/2 tspSalt
  • 1 3/4 tspSugar
  • 2 tbspLemon or lime juice

Steps

    Crumble fried onions and set aside

  2. 2

    Put the chopped onions, ginger, garlic and 3-4 tablespoons water into a blender and blend until you have a smooth paste

  3. 3

    Put the oil and ghee in a large non-stick, lidded fry pan and set over a medium high heat.when hot, poor in the paste from the blender and stir-fry for about 5 mins until the paste is lightly browned.

    Add the chicken pieces, stir for a further minute.

  5. 5

    Over the next 5 minutes add the yoghurt 1 tbsp at a time and keep browning the chicken.

  6. 6

    Add 175 mls water, the crumbled onions and salt. Sure to mix and bring to a simmer.

  7. 7

    Cover, reduce the heat to low and simmer gently for 20 mins, turning the chicken every now and then

  8. 8

    Add the chillies, sugar and juice, stir to mix. Cover and continue to chok on very low heat for another 10 minutes.
