5 tspolive oil
1 tbsplime juice
1/4 tspsalt
1/4 tsphot pepper sauce
1/2 cupcucumber, finely chopped
1/4 cupred onion, finely chopped
1 1/2 cupcorn
1 1/2 cupcherry tomatoes halved
2 tspdried basil
1/4 cupcrumbled feta cheese

in small bowl whisk 4 tsp. oil, lime juice, salt and pepper. set aside

cook corn, if fresh or frozen, in 1 tbs. oil til tender

transfer to salad bowl and let cool slightly

add tomatoes, cucumber, onion, and basil

if using fresh basil add 2 tbs. minced
6

chill, sprinkle with cheese before serving
