1 cupcooked rice
15 ozcan black beans, drained and rinsed
1 candiced tomatoes with green chilies
1 tspcider vinegar
1 cupchopped purple onion
1 cupchopped green bell pepper
2 tspfresh chopped garlic
1 tspcumin
1 tspthyme
1/2 tspcrushed red pepper
1bay leaf
1 tbspolive oil
1 tspcider vinegar
1/2 tspblack pepper
1salt to taste

heat oil in large saucepan

in Tablespoon oil, saute onions, green pepper, bay leaf, crushed red pepper, & thyme

add rice, cook 20 min

add beans, tomatoes, vinegar, salt & pepper

stir together and serve hot
