2 tbspsundried tomatos in oil
1/4 cuproasted bell peppers
1 packagesfrozen spinach, thawed and squeezed
1 canblack olives- small
1 canartichoke hearts
1 canmushrooms- small
3 slicebacon, cooked & crumbled
1/3 cupsauteed onion
1/2 cupgrated asiago cheese
2eggs, beaten
1/2 cuppine nuts

sautee onions, thaw spinach and squeeze dry

cook and crumble bacon

chop tomatoes, peppers, artichoke hearts, and mushrooms. Add the rest of the ingredients - egg last.

mix throughly and pour into greased 1 1/2 qt. casserole dish. Bake @ 350 for 45 min. to 1 hour. Let sit for 5 min. before serving.

top with pre-toasted pine nuts before serving if desired
