cook chicken breast w/1/2 onion, garlic and salt.

when meat is soft remove and let cool. (save stock). Then shred the chicken

cut onions in thin slices, peel and dice the tomatoes

Preheat pan and add oil. fry onions on low until transparent. Add tomatoes, chipotle sauce, salt, vinegar, and chicken stock cook for 10 minutes

Add shredded chicken, stir well for 10 to 15 minutes until stock has evaporated.

Then serve on tostadas/ lettuce, tomatoes, queso and crema.
