preheat oven on gas mark 4

weigh eggs as a whole,weigh the margarine, self-raising flour, and sugar the same weight as the eggs, and place in bowl.

Add baking powder and milk and whisk all the ingredients together till it becomes all smooth and a cream colour

split mixture into cup cake cases, an easier way to do this is by using an ice cream scope.place in oven till it goes a light golden colour, usually about 20-25 minutes.

whilst cakes are cooling, put icing sugar, soft butter, milk and vanilla essence in a bowl and whisk together.

add food colouring to you're liking and fold into mixture.

to apply icing use a piping bag. do a thin layer on top of cake then put more on top to get a nice swirl.
