Prepare brine, with 2 quarts of water, 1/2 cup of salt and sugar, and hot sauce, mix until dissolved.

quarter chicken and place in brine for one hour only!!!

Heat oil until it shimmers, then add paprika; 1/2 teaspoon of salt and sugar; and garlic powder and cyan or chili powder for 30 sec.

combine Florida, black pepper, and 1/2 teaspoon of salt, mix together.

coat chicken in flour, and place on a rack

heat cooking oil to 350°F

re-coat chicken in flour before placing in hot oil, cook until internal temp reaches 160°F.

brush cooked chicken in spice mix

serve on Texas toast
