  • 3 1/2 cupflour
  • 3 cupsugar
  • 2 tspbaking soda
  • 2 tspcinnamon
  • 1 tspsalt
  • 1/2 tspbaking powder
  • 1 canpumpkin (large)
  • 4eggs
  • 1 cupvegetable oil
  • 1/4 cupwater
  • 2/3 cupdark chocolate chips

    Preheat oven to 350°

  2. 2

    In stand mixer bowl, stir together all dry ingredients.

  3. 3

    In a large mixing bowl, hand mix wet ingredients until well combined.

  4. 4

    Stir wet ingredients and dark chocolate into the dry mixture on lowest speed.

  5. 5

    Drop into mini muffin tins (3) and bake for 24 minutes.
