Preheat oven at 180c (fan oven)

Wash, peel and chop veg.

Cut steak into bitesize pieces.

Put ingredients into casserole dish and 'just' cover with rich beef stock.

Ensure casserole dish lid doesn't let any steam out, I like to cover the dish with foil then put the lid on top.

Place in bottom shelf of oven and turn down the heat, 160c (fan oven)

This needs to cook for 4 hours but I like to check it after 2 hours and add some rich beef gravy granules. I usually add about a tablespoon. Give it a good stir and pop it back in the oven for the remaining 2 hours.

I would also like to add that if the beef stock has evaporated a little too much, just add more stock. This has happened to me once before and that's why I now use foil as well as a lid :)

Once the beef has cooked for 4 hours, the beef should "melt in your mouth" as my mum says.
