
Roasted Garlic and Caramelized Onion Dip

Preheat oven to 400

Remove outer skin of garlic. Keep the covers for the cloves intact. Cut the top off the head so the garlic is just exposed.

Place in a muffin tin. Cover with the vegetable oil and rub into cloves

Wrap tops with aluminium foil and bake for about 30 minutes or until the cloves are soft.

While garlic bakes, meet butter in pan over medium heat. add onions.

Allow onions to cook until just soft and sweating. Reduce heat and simmer until just golden. About 30 mins

Allow garlic and onions to cool

Add onions and garlic (without skin) to food processor or blender and mix until onions start to become mushy
- 9
Mix sour cream, mayo, onions and garlic together. Refrigerate for at least an hour.
