6 ozTenderloin steaks ( cut 1-2" thick )
1Cooking spray
1Salt & pepper to taste
4 tspCanola oil ( divided )
1/4 cupFresh flatleaf parsley ( chopped )
3 tbspFresh cilantro ( chopped )
1 1/2 tspGarlic ( chopped )
1 tspFresh oregano ( chopped )
1/2 tspLemon zest
1 tbspFresh lemon juice
1/4 tspCrushed red pepper

Coat each steak W/ spray; season W/ salt & pepper. Heat a large oven proof skillet over med-high heat. Add 1 teas. oil, add steaks to pan, & cook 3 minutes on each, or to a med-rare.

Combine remaining oil,1/4 teas. salt, parsley, & remaining ingrediants in a small bowl, stirring w/ a whisk. Serve W/ steak.
