My family's always loved Piccadilly's carrot souffle so I decided to find the recipe. We all agree it tastes just like it! :)

My family's always loved Piccadilly's carrot souffle so I decided to find the recipe. We all agree it tastes just like it! :)
Steps

Steam or boil carrots until extra soft. Drain well.

While carrots are warm, add sugar, baking powder, and vanilla. Whip with mixer (or blender) until smooth.

Add flour and mix well.

Whip eggs and add to mixture.

Add butter and mix.

Pour into 13" by 9" baking dish about halfway. The Souffle will rise.

Bake for about an hour at 350°F or until top is a light golden brown.

Sprinkle powdered sugar over the top before serving.
